Stout faucet with regular beer...

So, the thing is that I have a stout faucet and only three of the new Perlick 630SS, which I LOVE, so I serve regular beer through the stout faucet without a restrictor plate or the plastic "cross" in there. However, I still get cascading beer and a big head. It's bizarre. Is this common?

There was a thread somewhere on the forum earlier this spring regarding what some folks have served through their stout faucets - with the restrictor plate and flow straighteners in place. Most popular stout-alternatives were big IPAs. I reckon body must have something to do with the character perception after blasting through that maze, and something like a light wheat probably is just going to end up a flattened mess...
