Like a fool I accidently purchased LME instead of DME (New Briess containers...swore it was DME...won't happen again)

Now, I have a ton of LME that I don't really need...what's the best way to store it?

I now keep mine in the fridge. You can keep it on a shelf, but it will develop a mold on the top. As far as I can tell, the mold doesn't affect it, since when you use it, you boil it which kills the bacteria. I've been using some that has the top almost completely covered in mold, I just scrape it off and dip some out. It makes a great yeast starter.

I store mine in the fridge for up to several weeks. Mine comes in a sealed aluminum bag of some sort from MoreBeer. They suggest you store it that way if you won't be using it within a few weeks.
