Hi,

I have a yeast starter that I made using yeast from bottles. I have stepped it up a couple of times and it is ready to store in mason jars. Do I just swirl it up and pour it into the jars? Or do I decant the spent wort, add distilled water, then swirl and fill jars? Ive read yeast should be stored ind distilled water so it will go to sleep until time to make the starter.

I think a key point to getting it to sleep and storing it well is to get the oxygen out. Boil the water for 15 mins or so to get the oxygen out (as well as sanitize it) let it cool, then mak.e sure the jars are all the way filled up. Decanting most wort would help. Pour slowly to avoid oxygenation. Light some candles in the area to make a nice updraft to avoid nasties falling in. Hope this helps.
