Recently .. I made some very big beers .. Imperial Stouts, and I'm brewing a Barleywine that is off the charts. In the books I'm reading, I see how we need to keep beer fresh. BUT .. we also need to age thise big brews for a long time. When is the time to refrigerate this big brews ... how long should they be aged at room temperature ... anybody that knows .. please tell me.
