Hey guys. I just took the gravities of a 12 day old brew and I am a bit worried. I got about 13% alcohol. I tried it and whoah! it is dry. Now, that batch has just about stopped bubbling and I know that I can back sweeten before bottling. However, I started another batch on 10/07/2014 and I do not want this one to turn into apple wine. So, can I stop fermentation with a camden tablet? Will that effect the flavor? Should I just let the yeast ferment out and cut the hard cider with regular cider? Thanks.
 
Campden won't stop an active fermentation. You might have to let it ferment out, stabilize it and then blend it with fresh cider if that's the route you choose.
