This is going to be my second all grain brew, and well, being the ambitious person that I am decided to take a leap. I am going to try to do the Stone 11.11.11. I figure if I succeed, I'll have some good beer. If I fail, well, I'll still have beer. I got the recipe from the Stone blog. I'm going to skip the suggested mash out step since I'm using a cooler mash tun, and raising the water temp is not something I can do without expending too much water.

I've also changed the yeast from Wyeast 3220 Flanders Golden for White Labs WLP570 Belgian Golden because I can not find the Wyeast anywhere. I am also going to have to use red New Mexico chile's because I can't find green chile's without buying over 5lbs. I am planning to brew Sunday, so am going to get a starter going today. Planning on making 1.75 liters of starter, starting from 2 packages of the White Labs. Any suggestions are welcome, or if you feel that I've messed up somewhere, in my calculations below, please let me know.

I plugged the ratios into iBrewMaster and after adjusting the weights, I ended up with the following:

OG: 1.082
FG: 1.018
ABV: 8.38 %
Efficiency: 75 %
Boil Size: 6.97 Gal
Batch Size: 5.00 Gal
Preboil OG: 1.062
Boil Time: 90 minutes
