Should i shake or stir my one gallon batch of cider ? Or should i just let it sit ?? Its bubbling about 1 bubble every 4 secs. Its on the second day now.

It's bubbling because it's working. Don't touch it.
In fact, don't even look at it for another couple of months. During that time period, read all 800+ pages of the "Man, I love Apfelwein" thread.
