So if I steep 2# Of Pilsner Malt in large grain bag like you would speciality grains for extract beers would you think that you might get some conversion of the grains?

Yes, you will get some extract if the temperature is between 145°F and 155°F.

That’s cool.. I was thinking maybe 25-35% efficiencies but was not really that concerned about it.. Just wanted to see what others thought
If you use the typical muslin bag that many kits include the grains will be held tight together and you may not get as much conversion as if they were looser. You could put them into a gallon size paint strainer bag (cheap, easy to find in the paint section) to let them have more freedom. The efficiency of the conversion is mostly dependent on the milling of the grain. Mill them fine if you can.
