I picked up a small True GDM to set up as a fermentation chamber. I'm planning to use an STC-1000 for temperature control and drop a stainless thermowell into the fermenter. I know that with some thermocouples that it's not permissible to make a connection between the sensor and the controller as that junction sets up an additional resistance. With the STC-1000 outside the cabinet and the probe inside, I'd like to be able to easily disconnect the probe to clean the thermowell. Would having a connector inside the GDM introduce error?
 
The STC-1000 uses an 10K NTC thermistor - not a true thermo-couple - and you can pretty much get away with electrical murder connecting it to the controller. A hundred feet of wire - of any chemical makeup - isn't going to significantly alter the readings...
