Hi everyone,

I pitched some 3944 from the smack pack (it was swelled) into about 1.5L of starter wort on Wednesday night. On Saturday (today), it looked like most of it was falling out of suspension and creating a yeast cake on the bottom, so I pitched 1L more wort.

First question: did I miss anything?

Second question: will it be okay to leave the starter until Monday, my brew day?

Thanks!

2.5L starter? That's a huge starter (not that that's a bad thing)!!! Sounds like you got everything just fine, and your starter should be fine leaving it until Monday to brew.

Keep feeding your starter, and make sure it is oxygenated. Just to keep the yeast active and primed.

Get that starter aerated really well too. If you use an aquarium pump to aerate, get it going 24hrs a day; if you've got an O2 tank, give it a shot every few hours. The yeast need oxygen to reproduce.
