i'm wondering if its a good idea to protect your starters from light like you would a carboy of fermenting beer or is the volume just too small to make an significant skunky flavor change on the beer when you pour it in?

I would protect it from light, but skunky flavor actually comes from UV rays interacting with the hop oils.

if you sanitize properly, contamination shouldn't be a concern.
