I started my traditional honey mead on 2-26-12. It was a 3 gallon batch that when I racked it left a lot of head space. So instead of adding honey wine or something else to top up, I went ahead today and split into two 1 gallon jugs. I stole a taste while splitting. Holy crap. I have never had mead before. I'm sure this will settle down some after bottled and aged. Can't wait!

I did the opposite, I started my 5 gal batch of braggot split between two 5 gallon carboys so there would be enough headspace to keep it from blowing up. After a week they started looking pretty different (one was much more turbid than the other) so I combined them into one. Bubbling has stopped completely so I hope I didn't screw it up.
