I am working on a recipe for a Cinnamon Hazelnut stout but I haven't done a lot with spices or extracts yet. I had a holiday beer last year that I used a touch too much all-spice and it was way overpowering so I am being a little more cautious this time. Anyone have an idea about how much ground cinnamon would be good for a 5 gal all-grain batch? Also I will get Hazelnut extract so looking for a rough estimate on how many drops would be good for the same batch. I assume the best way would be to add this to taste right before bottling? Thanks!
 
I wouldnt use ground cinnamon. Get the whole sticks. Ive had good success using 3 at flameout then adding 2-4 more in primary to taste. For extracts, Ive always added a bit when I first take a gravity sample, then add more at bottling if needed

If you are using those 1"dram" bottles from Loranns Oils, I'd start with 1/2 the dram
