Last week I brewed a Belgian Wit using a new recipe(Recipe Below). It has fermented and is ready for its stay in the secondary. My issue is this: I tasted it out of the primary today and it's a bit on the bitter side. I wanted it to have a fairly strong hop character for the style, but I'm afraid I used too much bittering hops. Since I used a relatively small amount or sweet orange peel, I'm wondering if I can add more to counteract the bitterness. If this is a bad idea, will the bitterness mellow out with time? I used what hops I had at the time if the selection looks random, but I do have sweet orange peel available. Any help is appreciated!

Batch Size: 10 gal

Too much orange peel will actually just make it more bitter. Overly bitter beer is tough to fix; after some time, it might mellow out a bit. You could add a bit more malt/sugar and allow for some further fermentation, but that might be changing the beer more than you want.

I'd let it age more. That takes care of most minor flavor problems. Time heals (almost) all beers.

I'd also skip the secondary and just leave it in the primary longer next time.
