I'm thinking about brewing a Smash with Pilsner malt, Nelson Sauvin hops and using a wine yeast, probably D47, Cotes des Blanc's or Vintner's Harvest AW4.
Thoughts on this?

Many wine yeasts cannot ferment maltotriose and have a tough time maltose also...you probably won't get very good attenuation unless you research for a maltotriose compatible strain.
