hey,
i started reading about brewing beer and i want to start soon
but most sites talking about 5 gal brew while i wanted to start small scale maybe. (1 gallon or less)
is there any problems with small scale brewing? ingredients mixing less well or something?

and the most important, if i like the 1 gallon recipe will making bigger batch make the beer taste different

Brewing beer scales up and down very well. It's easy to make a 2 1/2 gallon batch from a 5 gallon or even 10 gallon recipe. Your major difference would be in the amount of pre-boil because you may boil off the same amount of water as with a larger batch. It's easy enough to work around though.
