Going to rack to secondary on a 3 gallon system. Need siphon knowledge.

1. Is a 5/16" cane and hose assembly be okay to rack almost three gallons?

2. How do you get a siphon going (manually)?

3. Any good links for kits?

In the meantime...

What I have done, is get a column of water in the siphon hose (either from your sanitizing solution if no rinse, or from water faucet) and then connect hose to racking cane while holding thumb over end of hose. Then you "purge" the primed tube into another bowl, which fills the hose with beer. Then you can slip the hose into the next carboy/bucket and voila - siphonage.

But I currently use an autosiphon and haven't looked back.
