I have about a Half Pound of Simcoe Whole Leaf Hops left from an Imperial IPA recipe that I Brewed about 2 months ago. So, seeing as these hops are hard as hell to get, I really want to use them while they are fresh. Anyone have any recipe recommendations for them? I brewed the Hop Hammer from Zani's book with them prior, and I am looking for something a little different this time. Something drinkable, but still with a LITTLE bit of a Hop Bite.
 
If it was me, I'd start with a SMaSH Blonde Ale. 10lbs of Pale Ale malt, enough hops for ~25 IBU @60, 1oz@15, 1@5. Mash high or ferment with less attenuative yeast.

Looks like you need some more sessionable beer in your pipeline. :)
