Should I use us05 slurry or a packet of m44 west coast yeast???

I have never used these hops and really want them to shine. So I am leaning towards m44 but not sure how it will play with wheat

Both are great for hops. Do you use pure oxygen to aerate your beers? If not, dry yeast need less oxygen and you may be happier with the ferment.
