i want to brew a hard cider and im thinking about using a Scottish Ale Yeast
any one ever used it

and i read the you can use oak chips in hard cider i would like to try that as well
but not to sure how use oak chips in a cider

any info would help
 
The scottish ale yeast worked well for my cyser (cider with honey added). It is currently aging. It fermented well, and the flavor profile is really nice. It will be better yet when the "heat" of the alcohol is mellowed out.
