Found a local beekeeper, picked up 15 lbs of Summer wildflower for $100 and a handshake. He had 2 harvests, the early one is a nice golden color and the fall harvest is much darker.

Last years mead was made with mesquite honey and I was disappointed in how little honey flavor is there even after back sweetening to 1.010. Gonna age it for a few years I guess.

This honey has a nice floral flavor, I'm thinking D21 or D47 for it. Mead time is coming...
 
Yeah I was listening to a podcast whose guys were saying that a traditional is quite a hard drink to make really well coz there’s no where to hide. I’m still learning the trade so anything that doesn’t peel paint works for me.
I guess the good thing is that there is always more mead to make.
