Hello,
I saved some extract I used on 12/1/09 in a plastic screwtop container. It was cleaned (although I don't think I santized) and I taped the screw part so no air would enter.

Should I not even bother with using it? Is there a good way to preserve extract?

what kind of plastic container is it? if its made for food and you got an air tight seal it is probably ok.
 
Easy answer, use DME instead of LME. It keeps much longer...

+1, I used LME for my first couple of batches but quickly switched to DME for both ease of storage and use. Since I now do AG, I keep some DME on hand for starters and whatnot, and it's all DME.
 
Yeah, I only recently figured out what those other packages at my LHBS were.

I know I read this somewhere, but what's the conversion between LME and DME?

You can preserve it in the fridge with a layer of Vodka floating on top to prevent mold. It won't last forever but the Vodka will keep it a little longer than without it.

One of the reasons I always used DME, it stays fresh MUCH longer.
