With my next batch I would like to try to save back some wort for priming at bottleing. My quetion is how much do I save back? It is a partial mash kit from AHS that is a big beer (10%+) that I want to brew now so that it is ready for the winter. Am I crazy for wanting to try this? Thanks for any help that might be given.

that is something i'd like to start doing as well. But easier then saving it, plan your brew days.

When I do a brew day i'm brewing one batch, kegging or bottling another and moving another to secondary. doing that you'd have fresh wert and a hell of a starter if you want to pitch onto a yeast cake.
