does everyone sanitize their stock pot before you start or do most of you just bring the water to a boil and then reduce to 155 degrees for steeping
 
No need to sanitize the stock pot, since you're boiling the wort. Go ahead and steep the grains, and when you remove them, you'll boil that "tea" and add your malt.
