Just wondering if any of y'all has a good saison recipe, preferably American-ish?

I am fairly new to brewing, so this would be my first saison. I really enjoy pretty things Jack D'or and want to try and emulate this, as best as possible!

Thanks!

That is an interesting idea! I would be interested in an American twist in the Saison too.

I made an American/Belgian saison recently. Used rye, wheat, and 2-row for my malt bill. I don't know the hops off the top of my head though. I used half American ale II yeast and half belgian saison yeast (both from wyeast). Additionally I added an extract of lavender and thyme at kegging.
It came out pretty well but jext time I would turn down the herbs a little and use more Belgian saison yeast than American ale to give it just a little more saison flavor.

I'm bottling one this weekend, used American 2-row, Vienna, and red wheat for malt, and Warrior, Simcoe, and Amarillo for hops. Used a bottle culture of Great Divide's Colette yeast and fermented it around 80*F. Absolutely no clue on how it's going to turn out, but I'll be sure to report back once it's conditioned.

Phenry, how did this turn out? I'm contemplating taking a saison recipe from BYO and adding a little bit of amarillo in the flavor and aroma additions to give it a little extra citrus. I'm curious to see if yours came out well.
