I got a packet of BE-256 from a local homebrew competition and am planning on brewing up a belgian dark strong to test this yeast out. The estimated OG of the beer is 1.088 which should be well within this yeast's tolerable range.

I only have 1 packet of the yeast and am wondering if I should get a second packet or just rehydrate the dry yeast per the instructions (10x weight of yeast in water, rest for 15-30 min then stir for 30 min and pitch).

Anyone have any experience with this yeast and care to chime in about the flavor profile or anything?
