This is part of my Wolverine series, which started with a cheap deal on Irish Red all-grain kits. Hence the recurrent theme of red and similar adjunct grains. I really want the red color to shine through; unfortunately, most of my beers have been muddy brown, even with Irish moss. I'm thinking of using gelatin for the first time, in the secondary right before bottling.

I'm also pretty psyched to see how the Polaris (2012 harvest) hops turn out. Supposedly they're a good sub for Northern Brewer, but with a more pronounced mintiness. (A lot of reviews say it's really gross)

I'm also planning to partigyle this beer from the second runnings of my Juggernaught Strong Belgian/Barleywine. I have no idea what the gravity will be.

The first mash has the same adjunct malts, but I'm going to add the same amount of cara40, caraaroma, and roasted barley to the second mash to make sure there's enough flavor. So essentially all the above values will be doubled. Have I made this confusing enough?

On that note, should I shoot for a SMaSH beer? It goes well with the theme...

To answer the question you haven't asked, these adjunct grains came pre-mixed with each 9-lb sack of 2 row. I'm certainly not too invested in 'em, but I can't adjust the amounts. I'm just relieved that they kept the 2-row separate!

I'm calling it an ISA- India Steam Ale. I know it makes no sense, but I'm listening to ODB and this is what I wanna do.

Should I scrap the idea (and the cali lager yeast) and just call it "Polaris- what's it taste like?"

Brewing today. Replaced the Munich with 1 full oz of Victory. Replacing dry hop with a hop-stand, as I don't wanna mess with a closed fermenter unless I absolutely have to.

Shameless bump. I'll report in a month when I crack one open.
 
I got a little overzealous with my new 8-gal extra kettle- I way over-shot and ended up with 7 gallons of wort with OG of a whopping 1.035, yeesh.

I pitched Cali lager yeast into 4 gallons and some harvested octoberfest lager into the other 3. At the very least, I'll have a yeast comparison and plenty of session beer this summer.

It does a disservice to the name Sabretooth... I might have to change it to "bub".
