Over the summer me and a buddy brewed this big ol RIS. Everything was going great until my dude broke out his "brewing beers" I don't remember what he brought, but they were boozy. VERY BOOZY. long story short... we forgot to add the hops. I realized while cooling the beer, and thought "screw it, let's see that happens"
I kegged today, it's awesome. Obviously no bitterness, but the astringency of the dark grains helps to disguise that.
I went all in on embracing the sweet nature and threw in some vanilla and bourbon.
It's amazing how forgiving beer is.
Also, I need to reevaluate my "takes beer to make beer" philosophy!
