I am looking to make an IPA with 12 lbs of Red X. I am trying for a grapefruit flavor and wondering what the best hop (s) to use to get that flavor and when would be the best time to add them. Because I do not have a fermentor chamber and it is around 90 outside in Michigan right now I am leaning on using Omega yeast either hothead or Kevik. Any help would be appreciated
 
Amarillo and Cascade are the typical "grapefruit" hops. Amarillo to bitter and both for flavor and aroma. I would add them late in the boil. Maybe 1 Oz. each at 10 minutes and 5 minutes. A 30 minute hop stand at 170 with an additional Oz. of each wouldn't hurt either.
