Root Beer Gone Bad!

Hello!
Hoping someone can provide some insight as to why my root beer batches went bad. I experimented with 2 separate batches using different ingredients for each, but for the most part pretty normal. Sassafras, sarsaparilla, licorice, juniper berries, cherry bark, vanilla, etc. I added yeast, maybe too much. about 1/8 tsp to a gallon. Sat for 3 days, refrig for 2 days, but when i cracked them they smelled and tasted like they were well on there way to becoming an IPA. Holy smokes! Probably made for a good drain-o. Any advice?

May I ask what your measurements for the ingredients were? I believe that's Crazy8's recipe as well which he updated further down the road.
