Hello everyone, I have 30 pounds of rhubarb sitting chopped up and in the freezer. My wife absolutly loves rhubarb wine. Does anyone have a recipe that I can follow, keep in mind she likes her wine semi sweet? I would like to do a 5 gallon batch.

Any help would be greatl appreciated. Thanks

Well, I used Jack Keller's recipe (with 7 pounds of rhubarb per gallon) and it's WAY too much rhubarb. I like the one I posted better.

To keep it sweet, you let it ferment out. Once it's finished and clear, you stabilize with sorbate and campden, then sweeten to taste. It's pretty easy to sweeten any wine.
