(PICS TONIGHT;))

Gonna make awesome red curry tonight with red curry paste from my Asian Grocery expedition.

I need to check my notes..but

2 cans coconut milk
2 tbsp red curry paste
1 lb large shrimp peeled and deveined
1/2 of a fresh pineapple diced chunks (cored, peeled, etc.)
1 large onion diced large
3 cloves garlic

Sizzle Shrimp, onion and pineapple in a deep skillet until shrimp are almost cooked, add garlic for 1 minute more.

Add coconut milk and curry paste. Reduce heat.

Serve with good rice.

I made this last night. It turned out awesome!

Next time, I think I am going to use green curry for a little more heat
 
The green had a distinctly different flavour........Maybe a little spicier, but more unusual flavor. Delicious!
 
OK with me!
I made a 1/2 size batch for the wife and I. I actually added more red curry to it. I had 1 Tbsp, and added another 1tsp.
Otherwise the coconut was overwhelming everything. Worked out really well

I did 4 or 5 tbsp in mine! Just added it til it tasted right!
