Recipes for Saison Yeast

I've made a couple of saisons this summer already. I have a bunch of washed 3724 yeast and I'm looking for something a little different to do with it. I started a cider with some yesterday. Any other suggestions? Thanks.

I think a mead would be an interesting choice.

A nice gallon of mead might not be too bad with the yeast, though I'd imagine I couldn't get the ABV up too much without having to finish with some other type of yeast.

This is one I'm trying next week once school is out for summer! Has a bunch on honey in it. I am getting married this summer so I'm calling it Saison de lune de miel (honey moon saison)
