Recipe suggestion for Wyeast 1084?

I'm brewing AHS Irish Red Ale tomorrow using Wyeast Irish Ale 1084. When that is done I would like to try pitching a new batch on some of the left over yeast cake from this batch (after consulting mrmalty, of course).

Any suggestions on a recipe (extract or mini-mash) to use with this yeast? I thought about doing a different Irish red to compare the two side by side. But I'm interested in other suggestions as well. Thanks!
