Been brewing extract kits for a while and decided to start formulating my own extract recipes after seeing a nice deal on a 50lb sack of dry malt extract...likely will use that bag to burn through some experimenting with recipes before making the jump to all-grain next year.

Looking for feedback on two recipes I've been playing around with in Beersmith that I'm hoping to brew in a few weeks.

New Zealand IPA- shooting for all NZ hops with some nice tropical notes, obsessed with their hops/beer since visiting last year.

Batch Size: 5.5. gallons
Boil Size: 6.5 gallons

8 lb - Briess Golden Light DME (86.5%)
1 lb - Muntons Wheat DME (10.8%)
0.25lb - Cara-Pils (2.7%)

1 oz - Pacific Jade - 60 min
1 oz - Pacific Jade - 30 min
0.5 oz - Motueka - 15 min
0.5 oz - Nelson Sauvin - 15 min
0.5 oz Motueka - Flameout
0.5 oz Nelson Sauvin - Flameout

1 oz Motueka - Dry Hop
1 oz Nelson Sauvin - Dry Hop

Yeast - Safale US-05

Stats per Beersmith:
OG: 1.062
FG: 1.015
ABV: 6.30%
IBUs: 61.0

Almond Joy Stout - shooting for a semi-sweet chocolate/almond flavor in a stout

Batch Size: 5.5. gallons
Boil Size: 6.5 gallons

1 lb - Chocolate Malt (9.8%)
1 lb - Chocolate Wheat Malt (9.8%)
0.75 lb - Caramel 40 (7.3%)
0.5lb - Cara-Pils (4.9%)

6 lb - Briess Golden Light DME (58.5%)


1 oz - Chinook - 60 min
1 lb - Lactose (9.8%) - 10 min
4 oz - Cacao Nibs - 5 min
1 oz - East Kent Goldings - 5 min

750ml bottle of Amaretto - Secondary
4 oz - Cacao Nibs - Secondary

Yeast - Safale US-05

Stats per Beersmith:
OG: 1.057
FG: 1.018
ABV: 5.1% (not including added ABV from Amaretto - should add ~ 1.2%)
IBUs: 30.1


Looking for any feedback / criticism. Feel like I may be over-complicating the grain bill on the stout.
