Ready to bottle?

Included is the picture of both my carboys. I wanted to bottle the cran apple one but it seems like it may not be ready. There are still coming to the top as you can see and based on the position of both air locks (for you) and I can still see bubbles coming every 10-15 seconds or so, it's still fermenting the concentrate. I want to sweeten and bottle carb so I was wondering should I still proceed tomorrow? Or should I wait it out and just bottle the one without the activity of the other? I used ec1118 btw

It's hard to tell by looking, and you need a hydrometer reading, but the one on the right doesn't look done. The one on the left may be about done, but it's definitely not clear.

You can bottle something that isn't clear as long as you don't mind some sediment and crap in the bottom of the bottle, though, as long as it's finished fermenting.
 
I don't know how much it will clear anyways as I had simmered some cinnamon (that I probably won't even taste) with some of the cider before campden/pitching. My hydrometer was taken by gravity and the floor in the worst conspiracy to date

I wouldn't consider bottling anything that wasn't clearly finished, either by hydrometer reading or by being totally clear (or at least, not dropping any sediment at all after at least 60 days). However, I tend to err on the side of caution, having a strong aversion to bottle bombs and glass grenades. I've been doing this a very long time (25+ years) and still wouldn't trust myself to guess when fermentation is done without clear signs of it being finished. Hydrometers are like $6, but worth their weight in gold in that respect.
 
Guitar Hero, really? I thought you were a serious brewer and consumer of alcohol, c'mon, tell us, what gives? Why would you want to get a buzz on from your own home made booze, and play Guitar Hero?

I agree with Yooper. Of course, I always agree with Yooper; I have had bottle bombs/glass grenades before, and scary is an understatement. I had walked over to a box of bottles earlier this year to look for any new blow outs, and seeing none, I turned around to walk over to the other side of the garage to work on my Immersion Chiller. Before I got there, I heard a boom from across the garage, and 2 feet behind me a giant chunk of glass hit the floor. That chunk of glass blew the top of the case open, and traveled 10 feet before landing on the floor. If I had not walked away from the case when I did, 5 seconds later I might have had to go to the E.R. to get the glass removed from my face. Another perfect example of someone much greater than me, keeping me safe, one more time.
 
I'm confused about your metaphor but yeah ima wait for the cran. I'm pretty certain. The other is done fermenting as before it broke I was getting a reading of 1.000 FG . But it's been sitting for 2 weeks now in secondary after nearly 3 in primary . The cran apple took a good week to fully come back and it's still going so I'm going to wait on that one
