I just went to my LHBS and threw together these ingredients for a random brew on my 6th batch ever. Let me know your thoughts:

0.75 GR32B Crystal 60 (Muntons)
0.25 GR30B Chocolate Malt (Muntons)
2.00 Clover Honey
6.00 Briess DME Pilsen

I am going to steep the grains at 150-165 for about a half hour. I got Safale US-56 yeasties. Using spring water from Acme.

I am looking for a dark amber med/high alcohol beer with a little extra hoppiness.

Thoughts?

How old is that yeast? I may be way off (I rarely use dry yeast) but I thought Fermentis changed the 'number' for US-56 to S-05 a while ago. So if it says US-56 it might be old...or maybe it's just me that's old and it was all a dream.:D
 
I just bought the yeast from my normal shop. It is US-56; It's not old.

A weird honey porter might be what it turns out like...

Edit: It is actually US-05, but the receipt still says US-56. Thanks for the heads up though...
 
Just transferred this to the secondary after 15 days. OG was 1.080. Gravity during transfer read 1.014. Tasted the beer and it is BY FAR the best beer I have made so far. The taste is almost spot on with many holiday brews out there (most notably GLBC Christmas Ale).

I wouldn't hesitate give this recipie a shot.

Will keep updating until I drink from the keg...
 
Nice.. I love randomly throwing stuff together and making a good recipe.

I did a 1 gallon batch of leftover grain awhile back. Its about a 10% abv Barleywine.. I guess.

One of the best beers I've made. Here it is converted to 5 gallon

5.00 lb Wheat Dry Extract (8.0 SRM) Dry Extract 38.86 %
3.33 lb Aromatic Malt (26.0 SRM) Grain 25.91 %
1.07 lb Chocolate Malt (350.0 SRM) Grain 8.29 %
0.80 lb Caramel/Crystal Malt - 20L (20.0 SRM) Grain 6.22 %
2.80 oz Hallertauer [4.80 %] (60 min) Hops 36.0 IBU
2.67 lb Candi Sugar, Dark (275.0 SRM) Sugar 20.73 %
1 Pkgs Nottingham Yeast (Lallemand #-) Yeast-Ale
