Wo days ago I put a Canadian ale in my glass carboy secondary. I got a gift card to my brew store and in my excitement brewed an Irish stout tonight. Usually I sit in primary a week transfer to secondary for two weeks then sit in bottles for three weeks. I have read here how a log of people enjoy leaving in primary so I have now forced myself into a new experience. My stout will have to sit in primary for at least two weeks. Nervously anticipating better beer.

Two not Wo

That thinking will result in some bad batches. Don't think in terms of weeks, think in terms of gravity readings.:)

Don't be nervously waiting for better beer. Do lots of reading on how to make better beer (think temperature control, yeast pitching rate, longer primary) and then blow your lunch money on another plastic bucket for a spare primary and brew another batch. I now have 3 fermenters and a secondary that sits empty.

I've never done a primary less than 4 weeks, neve done a secondary, and never had a batch I had to dump. Whatever makes your taste buds happy.
