I have been keeping my fermenting wort in a swamp cooler at 64 degrees (water temp) for a week now. I want to move the wort from primary to secondary so I can free up the primary and place a new brew into the cooler. Can I just go ahead and make the move from primary to secondary, or do I need to allow the water temp to rise so it doesn't shock the yeast. Ambient temp in my apartment is 68-70 degrees, so it would be a 4-6 degree temp increase.
Please don't tell me to just let it ferment in the primary in it's entirety; this is happening. I just need to know if I have to carefully monitor the temp increase.
