The differences are mostly negligible. I use cargill, which is one of the cheaper ones, and I've had zero problems.
 
I have a bag of 6 row I need to get rid of but it's one of my favorite beers and I have yet have a great conversion of this malt
 
When you say conversion do you mean starch conversion, or just as a general substitute?
Also, which recipe are you looking to make?
 
Buffalo sweat stout from tall grass brewery in Kansas it's an oatmeal stout yea starch conversion I think some of it was the temp control but I think I figured it out
 
There are subtle differences, but most any 2 row works. Rahr malting is close to Northern Brewer's HQs in the Twin Cities, hence being preferred.
 
People always rave about it. I have used great western and Malteurop 2 row with great results also.
