Im ageing my AW cider for a couple more months to get rid of the little after bite and waiting on the apple flavors to return. Im racking to get it off the dead yeasties in the bottom. My question is should i used campden tablets when i rack and if so how many?
 
I didn't use campden tablets when I made cider, last year. If you are planning on drinking it in a short time, I don't think you really need it. If you decide to though, one tablet per gallon is sufficient. Also to stop any further fermentation you should add potassium sorbate. This is usually done if you are going to backsweeten you cider. If you do add these to your cider, you will have to age it before the "odor" from them dissapates.
