So I wanted to make my first Melomel and after the fermentation slowed down drastically (basically stopped) and the ABV was around 13% I decided to rack it over some cherries in secondary.
Now as far as I understood it, if you want to add fruit to a Melomel in secondary you don't want it to start rapidly fermenting again - but mine did just that after a couple of days.
So what I wanted ask is what am I looking for when adding the fruit in secondary? And also, how often did this happen to you when you added fruit in secondary?
 
That's perfectly normal. Fruit contains sugar, and adding sugar will restart fermentation. But it's usually a lot less active than the primary was and won't last as long.
 
I was expecting some activity, but it almost seems like it's fermenting more than in the primary.
So, as I figured, what I'm aiming for when adding fruit in secondary is much gentler fermentation. Lesson learned. Hopefully next time I'll be able to achieve that.
 
How long did you leave it in secondary? I'm about to rack my first batch and add fruit and spices.
