Quick Help with Mashing

ok, I just racked my tripel to to the secondary
and im happy with it but that isnt the point
at the moment, the real question is im about
to make my house ale (well what i hope will
be my house ale, my first brewing of this) and
im not sure if i should use step mashing or
single infusion. The recipe is as follows.

4th St. Ale

7 Lb. 2-Row
1 Lb. Crystal 40L
1 Oz. Chocolate
1/2 Oz. Black Patent

Well it was imperdinent, Thanks bud, ill post results from this
brew, i'm hopeing for good times.
 
I agree; theres nothing in your grain bill that would need a step mash.

One nit pick though, that looks like more of a dark ale than a tripel unless you've added a kilo of candi sugar...

that's not the recipe for the tripel...

he just mentioned that he had "just racked [his] tripel to the secondary....but that isn't the point at the moment..."
 
Right, the tripel looked more like:

12 Lb Pilsen
1 Lb Aromatic
1/2 Lb Carapils.

But again, thats against the point.

The hop bill might have been a bit much, but
that was what i was looking for and this is
my house ale for god sakes, so here it is.

Cluster 6.9% AA 1/2 Oz. boil
Kent Goldings 4.9% 1/2 Oz. 30 min.
Cluster 6.9 % AA 1/2 Oz. At knock out

Again not quite ale like? my house, my ale,
my rules.
