I built up the dregs from a bottle of Jester King and plan on brewing up this simple beer using dry malt extract and honey. I plan on letting the yeast and bacteria sit for a month or so before kegging. I was thinking of something close to a wheat beer as the base.
Here's what I have so far:
3 lbs Bavarian Wheat DME
1.5 lbs Golden Light DME
1 lbs Honey
.5 oz Cascade @ 60 min
.5 oz Cascade @ 15 min
Add DME to 6 gallons of water and boil for 60 minutes, adding honey at flameout.
Est OG: 1.043 (beersmith) 1.046 (brewers friend)
I'm aiming for lower bitterness so the Jester King bacteria can do its thing.
Does this sound OK?
