Hey all, long time peruser, first time posting.
I wanted to get some thoughts on a beer I could get fermenting using WYeast 2112. I just drained off 10 gallons of Kolsch to secondary to mellow until the spring, so I have empty fermenters. My state of the art fermentation chamber (read basement) is at a steady 60 degrees and I was hoping to make an altbier, as well as something with WYeast 2112, that I can drink in the coming month or so.
However, I have never used this strain and so I don't know how quick the turnaround can be on it. I was first planning a California common, but I was looking for something with a bit more hops.
So my question is, how fast can I go from grain to glass with 2112. And to follow up, does anyone have any recipe suggestions (all grain)?
