Has any one figured out a good recipe for a mead that tastes like applesauce? I have a few 6.5 gl carboys sitting around waiting to be used

On a side not is this batch still good? I added more energized and nutrition bad idea by the way it had a massive over flow blew my top off lost about an inch of mead and spent about half an hour getting it under control to be able to put my top back on

Don't have a recipe for apple sauce flavored mead although you might heat the apple juice to cook it and that might help provide a more sauce -like flavor. You might also caramelize the honey (a bochet) although what most folk do is not caramelize their honey but instead scorch it (that's a no-no). Honey caramelizes at either 230 F (the fructose) and/or 320 F (the sucrose and glucose). There is some maltose in honey (about 7%) and that caramelizes at 356F but hit higher temperatures and you have burnt toast.

The problem you had with your volcano is that you added tiny particles (from the nutrients) to a liquid that was saturated with gas (CO2). The particles nucleate the gas allowing the gas to collect (like rain around dust in clouds) and that collected gas has enough energy to leave your carboy pushing columns of liquid ahead. The neck of your carboy then rifles the jet of liquid. The solution is multi-part: a) use a bucket as your primary; b) make sure that anything you add to the primary once fermentation is well underway is completely dissolved; c) stir the mead in the primary frequently during active fermentation to degas.
If the alcohol level was below 9% then adding nutrient would do no harm. After the ABV hits 10% the yeast can no longer assimilate the nutrients (essentially, the nitrogen) and so you may be feeding other organisms but nucleation in and of itself won't really have much effect on the mead. It may mean that you have to repaint the ceiling and walls - but that is another story.
