Im going to bottle a witbier with pepermint extract this upcoming saturday. So far from my samples the mint taste is still a little overpowing. I like it but it's presence is too strong.

My idea was to rack to a secondary and add some kind of fruit to it.

How should i go about this? Is it a good idea?

Any other possible ideas?

Yeaaaah, peppermint extract is a little hardcore. When I made a Chocolate Peppermint Sweet Stout I added 6 bags of peppermint tea at the end of the boil.

As for fruit, try something with strong flavors like raspberry, cherry, etc.

SWMBO suggests getting some actual peppermint and buying an array of fruits to determine what goes well. Don't speculate, actuall figure it out.

Good luck :mug:
