Question about the NB Belgian Dubbel Extract Kit

I just received the Belgian Dubbel extract kit from NB and notice it only has .25lb each of Caramunuch and Special B. A lot of recipes and other kits seem to have a lot more specialty grains. Should I add some or will the amount included in the kit be enough?

Also it came with one yeast packet. I'm going to do a starter. Is a 1L starter with one yeast pack enough or should I use 2 yeast packs?
 
This forum seems to be dead in re: noobs who don't contribute. Perhaps a foray to the livelier Northern Brewer forums would be in order.
 
The recipe has a lot of great reviews. I would assume that it makes a very good beer just the way it is.
As for the yeast, two packs would definitely be overkill. OG is only 1.062. A 1L starter should be enough.
