Hello!

I have a hef in the secondary right now and everything seems to be going great. My plan was to bottle it tomorrow morning before I leave town for the holidays.

However it is clear that the fermentation is not done yet. Is it ok to leave the beer in the secondary for an extra week, and then bottle immediately upon returning? Will this negatively affect the bottle conditioning?

You have no choice but to wait. Don't worry, it will be fine.
If the beer clear too much, just swirl up a little yeast for bottling when you're ready.

It would be OK to leave the beer for another month if necessary. Your biggest potential problem is that your hefeweisen might clear. If you want to ensure that is stays cloudy, a tablespoon of flour at the end of the boil will keep if cloudy.
