Like an american lager
so this is a recipe I’ve been working on , its a pre Prohibition cream ale using saaz hops instead of nuggets. I’m still working on it but figured I’d post it up, I’m pretty sure I’m done tweaking it for a while.

I’m using a water profile I built on brewing water using my local tap water as a base.

90 percent american Pilsner malt
10 percent flaked corn

Mash at 154 for 60 min

Mash out at 175

90 min boil

1oz magnum at 60
1oz saaz at 15
1oz saaz at 5

Cool wort to 55 , and pitch 2 packs of wlp029 per 5 gallons . Let beer free rise to 60 and hold there until krausen has formed . Raise to 62 and hold until krausen falls , then Raise to 68 for 4 days. After 4 days has passed crash to 32 and lager for 2 weeks , if it’s not clear fine with gelatin.


I’ve brewed this 4 times making tweaks each time and I think this one is my favorite. Fairly tasteless , yellow fizzy beer any BMC fan will appreciate.

How did the saaz turn out? I've been making cream ale all summer using lemondrop but lately I've been thinking of using the saaz. Lemondrop turns out quite well btw.

I like the saaz , I prefer noble hops to all else , I guess I’m a bit of a beer weirdo. I would like to use a cluster hop sometime though , just to be ultra traditional.

I, too, am a bit of a puritan when it comes to hops. I've been really enjoying Hull Melon, Mandarina Bavaria and Hallertau Blanc in hop-forward styles; all noble hops, all imported from Germany, all work well together. I have also used Hersbrucker but wasn't crazy about it, maybe mine were old. I have an unopened bag of cluster, planning to use some in a RIS this weekend. Got to get me some Saaz now.
